400-Calorie Restaurant Meals,  We don’t eat out very much, but when we do, I love to go to  Chipotle.   Fortunately for me, Chipotle is very easy to duplicate at  home.    The  best part about making it at home is that you can control  the  ingredients.  While Chipotle is better for you that most fast food,  at  home you can use lower calorie ingredients which helps your weight  loss  efforts.  As an added bonus, it’s cheaper too! 400-Calorie Restaurant Meals: Today’s 400 Calorie Dinner is inspired by what we call “Make your own  Chipotle” nights at my house.   Since yesterday  was Cinco de Mayo, we  had a Mexican inspired meal and this was the  perfect choice.  I just set  out the ingredients buffet style and let  everyone make their own.Today’s 400 Calorie Dinner:
- 1 portion Chicken Fajita Bowl (details on portion size below)
- 1/2 cup diced cantaloupe
- 392 calories
- 11 grams of fat
- 4.3 grams of fiber
Chicken Fajita Bowls Recipe
This recipe is flexible on the amounts depending on how many people you are feeding.
To start with make brown rice according to package directions. To the cooking liquid, add the juice of a lime and 2 tbs finely minced fresh cilantro. In the meantime, slice 1 onion and 1 green pepper into strips. Saute in 1 tbs of olive oil or coconut oil. Warm about 2 cups of diced leftover chicken. You will also want to grate about 8 oz of 50% reduced fat shredded cheddar cheese. Set out bowls of salsa and sour cream for topping.
For one portion for this 400 calorie dinner, you will want
- 1/2 cup cooked brown rice
- 1/2 cup sauteed green peppers and onions
- 1/2 cup diced cooked chicken
- 1/4 cup salsa
- 2 tbs non-fat sour cream
- 2 tbs 50% reduced fat shredded cheddar
